Black Bean Egg Rolls - SO YUMMY!!!

For all those asking for the egg roll recipe:


Black Bean Egg Rolls:

1 can black beans
1 cup roasted corn (1 cob) - brushed w/ olive oil then 350 degrees for 15 min.
1 red pepper, roasted and diced - roast same as corn, then put both corn and pepper in a bowl and cover with plastic wrap until ready to mix in.
1/2 cup red onion, diced
1/2 jalapeno, seeded and finely chopped
2 cloves garlic, crushed and chopped
1 tomato, seeded and chopped
2 cup cooked rice
1/4 cup cilantro (use fresh cilantro and do to taste. I usually use less cilantro)
1 tsp. cumin
1/2 tsp salt
1 package large egg roll wraps

Combine all ingredients in a bowl and mix. Place 3-4 tablespoons of mixture in an egg roll wrap and roll. In a frying pan, heat 1-2 cups of vegetable oil to med-high heat. Fry the egg rolls until browned on both sides (about 2 minutes on each side). Place on paper towels to drain.

There you have it!!! The hardest part is dicing all the veggies. The best thing about this recipe is it really can be changed however you want. Add ingredients, take them out, use more rice to make it go further...etc. It's easy and they are SUPER yummy!!! Let me know if you have any questions when you make them :)
