Black Bean Egg Rolls - SO YUMMY!!!

For all those asking for the egg roll recipe:


Black Bean Egg Rolls:

1 can black beans
1 cup roasted corn (1 cob) - brushed w/ olive oil then 350 degrees for 15 min.
1 red pepper, roasted and diced - roast same as corn, then put both corn and pepper in a bowl and cover with plastic wrap until ready to mix in.
1/2 cup red onion, diced
1/2 jalapeno, seeded and finely chopped
2 cloves garlic, crushed and chopped
1 tomato, seeded and chopped
2 cup cooked rice
1/4 cup cilantro (use fresh cilantro and do to taste. I usually use less cilantro)
1 tsp. cumin
1/2 tsp salt
1 package large egg roll wraps

Combine all ingredients in a bowl and mix. Place 3-4 tablespoons of mixture in an egg roll wrap and roll. In a frying pan, heat 1-2 cups of vegetable oil to med-high heat. Fry the egg rolls until browned on both sides (about 2 minutes on each side). Place on paper towels to drain.

There you have it!!! The hardest part is dicing all the veggies. The best thing about this recipe is it really can be changed however you want. Add ingredients, take them out, use more rice to make it go further...etc. It's easy and they are SUPER yummy!!! Let me know if you have any questions when you make them :)

Olive Garden Breadsticks

We shall see, if this recipe works, when I actually try it I will let you all know! :)


Olive Garden

In your stand-mixer or breadmachine, mix together:
1 1/3 cups of water
4 tsp soft butter
4 cups of flour
2 Tbsp sugar
2 tsp salt
2 tsp yeast

Step 1:

Roll these pieces into cigar-shaped sticks ofbread.
Arrange on a baking sheet.

Step 2:

Step 3:

Use your brush to butter each stick, saving some butter for later. Sprinkle with kosher salt.

Step 4:

Remove, then brush twice more and add another sprinkling of kosher salt and a light sprinkle of garlic powder.

Tada! Olive Garden breadsticks.

Harmon's


So here is insight into my thoughts, the following is my thought process on the way home from work today. 

"Hmmm....I'm really hungry. Astro Burger sounds good. Although I don't want to pay $6.00 for grilled cheese (insert: I get the combo meal)....Maybe Taco Time. No, that's no better. Paying $6.00 for a burrito is insane. I could make my own burrito for 1/10th that. Except food from a restaurant always does taste better. Shoot. I don't have tortilla's at home either. Mmmmm....tater tots. They do have that going for them. I could get tater tots. Those sound good. Tater tots smothered with cheese and ranch dressing. Although, I could also make those at home. But, I don't have those either. Better put those on the grocery list. Why haven't I realized I could make my own cheesy tater tots before?!? Wait. There's a Wal mart, I could just stop there. I prefer Harmon's though. Oh I love Harmons. The friendly staff, the drive up car loading, the clean happy atmosphere, finding treasures you thought were no longer made like "cheesy alfredo mac and cheese", ah Harmons. I really do love Harmons. So no to Wal Mart. I will just go to Harmon's later in the week. HOLY COW! When did I become so interested in grocery stores?!? When did I grow up?!? When did I start having a favorite grocery store or even caring? What the?!? Crap I'm getting older. Sneaky!!! I guess having a favorite grocery store comes with being married and having a kid. But really how did it happen. Strange. Where did the last 6 1/2 years go. Is this what "adults" think about? Favorite grocery stores? The cost of a burrito and how you could make the same tasting burrito at home. Hmmm...thinking of which I still need to look online and see if I can find the recipe online for Olive Garden's breadsticks so I can make them at home....oh oh oh...and their soup. Top priority when I get home. Then I can add that to my grocery list when I go to Harmon's. Oh Harmon's, my grown up grocery store."

Extreme Yachts









While nannying last week, I got so lucky as to have BOTH babies fall asleep for about an hour. So after perusing the TV Channels I settled on Extreme Yachts on the HGTV channel (or maybe it was the Travel Channel) any way....I want to own a yacht one day!!!  I am now bound and determined that someday we will own a yacht!!! Even if it means eating Ramon for the next 50 years...LOL

Oh my heavenly goodness!!! I had no idea what a yacht really was. To me it would be the perfect way to travel. It's like creating your own cruise. Over the past couple years I have heard people refer to their ski boats as "certified small yachts" and thought "hmmm I thought yachts were bigger!" Well now I know they come in all sizes. I also should clarify I don't just want a yacht. I want a yacht big enough that you have a staff to service it and it has its own crew!!! That would be the life!!! So, whenever Broc and I have about 50 million to throw around, a yacht will be my first purchase. LOL 

I actually did some research to see what would be the cost of chartering a yacht for a week and for the Lady Lola (pictured above) it was $420,000.00 Hmmm....don't think we will be chartering one anytime soon! :)
